Restaurant EDGE initiates creative collaborations with like-minded partners to produce a holistic celebration of the African continent.
Conceptualised by Chef Vusi Ndlovu and inspired by his own heritage and experience, EDGE focuses on underutilised ingredients, progressive techniques and recipes passed down over generations, allowing guests to discover a snapshot of Africa on each plate.
The result is menus that showcase the components that make Africa so meaningful.
An ever-changing curation of dishes highlight indigenous ingredients, sourced from local markets, traditional artisans and small-scale farmers and in turn, serve as an opportunity to support local businesses.
With a focus on cooking over flame, dishes are reimagined in a contemporary, minimalist and respectful way, invoking a strong sense of community and tradition (Gogo’s – grandmother’s – cooking) reminiscent of African storytelling around the fire.
The wine list will parallel the kitchen and feature an exciting rotation of local independent wineries, focusing on minimal intervention and natural labels which are ‘progressive regional’ from boutique producers.
An innovative curated cocktail list has been developed exclusively by the EDGE team using African spirits, botanicals and ingredients.
From the food, to the wine, to the art on the walls and even the apparel design on the staff, Chef Vusi and his team will set Africa in all her summer glory against the backdrop of the iconic Table Mountain and Mount Nelson hotel in the beating heart of Cape Town.
